====== Waffles ====== * 1 cup flour * 1 tsp baking powder * 1/4 tsp salt * 2 eggs * 1 cup of milk * 1/4 cup veg oil * 1/4 tsp vanilla * 1/2 tbsp sugar ====== Icecream ====== * 2 cups of milk (1) * 2 cups of whipping cream (3) * vanilla * 1 cup of sugar - optionally add flavor: * remember anything you add needs to be concentrated flavour * strain as needed before adding (berry skins, seeds, etc) * cook it down to taste and chill before adding (may need to be prepped the night before) * crushed chocolate bars and cookies need to be smashed and frozen and added at near the very end. * chopped bananas * cocoa powder * shredded dark chocolate * cinnamon * saskatoon berry * jams and pie filling may need to be reduced to increase flavour ====== Coconut rice ====== * coconut milk * 2 parts sugar * 1 part salt ====== thai curry ====== - add oil - add garlic powder - saute onions - fry / brown: * steak to rare * chicken to medium rare - add salt and pepper, and basil - pour everything onto a plate - fry some combination of complimentary veggies: - add oil, garlic, basil, pepper - onions - yellow / orange peppers - bamboo shoots - mushrooms - tomatoes - zucchini - pour everything onto a plate of meat - add oil - add jar of curry sauce (green, red, etc) or curry paste - add coconut milk - fry for a bit - add sugar and pepper to taste - throw back meat and veggies into curry sauce - simmer until meat is cooked - add sugar and pepper to taste - serve ====== Mushroom spaghettini ====== * fry * mixed mushrooms, lots * onion * pancetta * salt and pepper * deglaze fond with * alfredo * or butter * and olive oil * or wine * boil spaghettini * toss with sauce ====== French onion mushroom soup ====== - Brown / saute: * 4 onions chopped unevenly * 4 garlic cloves * 1/3-1/2 a butter * add some black pepper * it takes a while, turn up heat as needed, but do not burn - add and simmer: * 1 can of beef stock and bring back up to heat * add one teaspoon of grainy mustard or dijon * 1 can of chicken stock and bring back up to heat * 1 can of wild mushroom cream soup and bring back up to heat * one bay leaf * season to taste, if needed!!! add water if too salty. - optionally add: * cooked potatoes * fried spam * fried bacon - bake / broil in oven proof dish until cheese is melted or golden * with croissants cut up and layered on top * cut them like little 1 inch disks/cylinders and place them flat side down * with cheese shredded and layered on top ====== spaghetti sauce ====== - heat oil - add garlic powder - fry some onions - Add and fry / brown 2 of these * ground beef * sausage split into balls * pancetta * bacon - add black pepper and basil - use red wine to deglaze - pour everything onto a plate - Fry - more onions - mushrooms (optional) - chopped tomatoes - add black pepper and basil - use generous red wine to deglaze - cook down the red wine - add back in plate of meat - add olive oil - open and add 1 - 2 jars of tomatoe and basil pasta sauce - bring to a boil, then to simmer - add black pepper, sugar and shredded marble cheese to sweeten sauce - add more red wine if needed (cook down first in pan if needed) ====== lamb shank stew ====== - chop lots of: * potatoes * carrots * onions * tomatoes - add it all to slow cooker - add * 1-2 cans of beef stock * 1 cup of red wine * add basil, pepper, sugar, some salt * add bay leaf(s) * add 3 lamb shanks - add water enough to cover everything - slow cook for 8 hours * stir occassionally - cube some fatty steak - brown steak slightly, keeping center rare. - when stew is done, add salt, pepper and sugar to taste - add steak cubes - slow cook for slightly longer ====== hot dog sandwich ====== - cut croissants in half - add cheese on one side - on the other side, add: - mayo - lettuce - tomato - ketchup, mustard - pickels - slice down the center bratwurst, smokies, etc - fry to brown - place "hot" dogs onto cheese side of croissant, allow cheese to melt - serve ====== Easy cheese bread ====== - buy some naan from grocery - layer cheese on naan * havarti - sprinkle herbs like pepper, dill, sugar - bake until cheese is bubbly and golden - optional: * before baking add: * fried pancetta/bacon * chopped cured meats * already cooked mushrooms * careful to not add anything with too much water in it ====== baked dilly salmon ====== - in baking dish, add olive oil - add sliced tomatoes all along the bottom - add pepper, salt, sugar, fresh dill chopped - season salmon with * olive oil * pepper, salt, sugar * generous on the fresh dill chopped * coat both sides - lay salmon in baking dish - place some chunks of butter on top of the salmon and around - add lime juice - crack some eggs into baking pan and fill in the cracks (break yokes) - sprinkle top with black pepper, and pinch of sugar - bake until done - you may need to take it out occassionally to cut the salmon open so the thicker parts cook * also take the opportunity to allow the juices to spread into the slamon when you split it so it doesn't cook dry. - do not overcook. - optionally: * add some pan fried asparagus on top of tomatoes under the salmon before baking ====== baked butter chicken fettuccini ====== - make pasta el dente do not overcook since you will bake after - add oil - add garlic - add onions and saute - brown some chopped chicken thighs * if you use boneless, add fat via bacon or pancetta * do not cook through - pour out everything onto a plate - add oil - brown mushrooms (optional) - add jar of butter chicken (patak) - fry sauce and season to taste * pepper, sugar - add back meat - cook for a bit - put pasta in a baking dish - cut it up as needed - pour butter chicken over noodles covering everything - shred marble cheese on top - bake until cheese is melted and golden
