Waffles

  • 1 cup flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 eggs
  • 1 cup of milk
  • 1/4 cup veg oil
  • 1/4 tsp vanilla
  • 1/2 tbsp sugar

Icecream

  • 2 cups of milk (1)
  • 2 cups of whipping cream (3)
  • vanilla
  • 1 cup of sugar
  1. optionally add flavor:
    • remember anything you add needs to be concentrated flavour
    • strain as needed before adding (berry skins, seeds, etc)
    • cook it down to taste and chill before adding (may need to be prepped the night before)
    • crushed chocolate bars and cookies need to be smashed and frozen and added at near the very end.
    • chopped bananas
    • cocoa powder
    • shredded dark chocolate
    • cinnamon
    • saskatoon berry
      • jams and pie filling may need to be reduced to increase flavour
   

Coconut rice

  • coconut milk
  • 2 parts sugar
  • 1 part salt

thai curry

  1. add oil
  2. add garlic powder
  3. saute onions
  4. fry / brown:
    • steak to rare
    • chicken to medium rare
  5. add salt and pepper, and basil
  6. pour everything onto a plate
  7. fry some combination of complimentary veggies:
    1. add oil, garlic, basil, pepper
      1. onions
      2. yellow / orange peppers
      3. bamboo shoots
      4. mushrooms
      5. tomatoes
      6. zucchini
  8. pour everything onto a plate of meat
  9. add oil
  10. add jar of curry sauce (green, red, etc) or curry paste
  11. add coconut milk
  12. fry for a bit
  13. add sugar and pepper to taste
  14. throw back meat and veggies into curry sauce
  15. simmer until meat is cooked
  16. add sugar and pepper to taste
  17. serve
 

Mushroom spaghettini

  • fry
    • mixed mushrooms, lots
    • onion
    • pancetta
    • salt and pepper
  • deglaze fond with
    • alfredo
    • or butter
    • and olive oil
    • or wine
  • boil spaghettini
    • toss with sauce

French onion mushroom soup

  1. Brown / saute:
    • 4 onions chopped unevenly
    • 4 garlic cloves
    • 1/3-1/2 a butter
    • add some black pepper
    • it takes a while, turn up heat as needed, but do not burn
  2. add and simmer:
    • 1 can of beef stock and bring back up to heat
    • add one teaspoon of grainy mustard or dijon
    • 1 can of chicken stock and bring back up to heat
    • 1 can of wild mushroom cream soup and bring back up to heat
    • one bay leaf
    • season to taste, if needed!!! add water if too salty.
  3. optionally add:
    • cooked potatoes
    • fried spam
    • fried bacon
  4. bake / broil in oven proof dish until cheese is melted or golden
    • with croissants cut up and layered on top
      • cut them like little 1 inch disks/cylinders and place them flat side down
    • with cheese shredded and layered on top
  

spaghetti sauce

  1. heat oil
  2. add garlic powder
  3. fry some onions
  4. Add and fry / brown 2 of these
    • ground beef
    • sausage split into balls
    • pancetta
    • bacon
  5. add black pepper and basil
  6. use red wine to deglaze
  7. pour everything onto a plate
  8. Fry
    1. more onions
    2. mushrooms (optional)
    3. chopped tomatoes
    4. add black pepper and basil
    5. use generous red wine to deglaze
    6. cook down the red wine
  9. add back in plate of meat
  10. add olive oil
  11. open and add 1 - 2 jars of tomatoe and basil pasta sauce
  12. bring to a boil, then to simmer
    1. add black pepper, sugar and shredded marble cheese to sweeten sauce
    2. add more red wine if needed (cook down first in pan if needed)

lamb shank stew

  1. chop lots of:
    • potatoes
    • carrots
    • onions
    • tomatoes
  2. add it all to slow cooker
  3. add
    • 1-2 cans of beef stock
    • 1 cup of red wine
    • add basil, pepper, sugar, some salt
    • add bay leaf(s)
    • add 3 lamb shanks
  4. add water enough to cover everything
  5. slow cook for 8 hours
    • stir occassionally
  6. cube some fatty steak
  7. brown steak slightly, keeping center rare.
  8. when stew is done, add salt, pepper and sugar to taste
  9. add steak cubes
  10. slow cook for slightly longer

hot dog sandwich

  1. cut croissants in half
  2. add cheese on one side
  3. on the other side, add:
    1. mayo
    2. lettuce
    3. tomato
    4. ketchup, mustard
    5. pickels
  4. slice down the center bratwurst, smokies, etc
  5. fry to brown
  6. place “hot” dogs onto cheese side of croissant, allow cheese to melt
  7. serve

Easy cheese bread

  1. buy some naan from grocery
  2. layer cheese on naan
    • havarti
  3. sprinkle herbs like pepper, dill, sugar
  4. bake until cheese is bubbly and golden
  5. optional:
    • before baking add:
      • fried pancetta/bacon
      • chopped cured meats
      • already cooked mushrooms
        • careful to not add anything with too much water in it


baked dilly salmon

  1. in baking dish, add olive oil
  2. add sliced tomatoes all along the bottom
  3. add pepper, salt, sugar, fresh dill chopped
  4. season salmon with
    • olive oil
    • pepper, salt, sugar
    • generous on the fresh dill chopped
    • coat both sides
  5. lay salmon in baking dish
  6. place some chunks of butter on top of the salmon and around
  7. add lime juice
  8. crack some eggs into baking pan and fill in the cracks (break yokes)
  9. sprinkle top with black pepper, and pinch of sugar
  10. bake until done
  11. you may need to take it out occassionally to cut the salmon open so the thicker parts cook
    • also take the opportunity to allow the juices to spread into the slamon when you split it so it doesn't cook dry.
  12. do not overcook.
  13. optionally:
    • add some pan fried asparagus on top of tomatoes under the salmon before baking

baked butter chicken fettuccini

  1. make pasta el dente do not overcook since you will bake after
  2. add oil
  3. add garlic
  4. add onions and saute
  5. brown some chopped chicken thighs
    • if you use boneless, add fat via bacon or pancetta
    • do not cook through
  6. pour out everything onto a plate
  7. add oil
  8. brown mushrooms (optional)
  9. add jar of butter chicken (patak)
  10. fry sauce and season to taste
    • pepper, sugar
  11. add back meat
  12. cook for a bit
  13. put pasta in a baking dish
    1. cut it up as needed
  14. pour butter chicken over noodles covering everything
  15. shred marble cheese on top
  16. bake until cheese is melted and golden
